Paella is Spain’s national dish, originating in the area around Valencia where both fishing and rice cultivation have dominated the region for centuries. The two key ingredients for a great recipe are Spanish saffron and Spanish bomba rice. When the pan is simmering, it is loaded with soup from chicken, sausage, mussels, clams and shrimp, which adds plenty of sweet, tense juices until the rice cooks evenly and absorbs the liquid.
